En nomade culinaire, il a dirigé des restaurants dans divers pays européens, aux États-Unis, Mexico, à Singapour ainsi qu’au Moyen-Orient. Établi désormais à Genève, non loin de son Italie bien-aimée, il est à l’origine du projet visionnaire de la Société anonyme cuisiniers et de l’initiative «Cinquième Jour».
