My name is Marc Vicari, and I am launching the project «la vigneronne» to produce non-alcoholic Swiss wines. As a wine professional, I had to spend nearly four months without alcohol in 2023 for medical reasons, which led me to rethink wine consumption. This experience confronted me with an important question: what to drink when you can’t consume wine, especially during social moments like aperitifs or meals?

Reflecting on this question and realizing that it is not currently possible to produce such wines in Switzerland, I became convinced that it was necessary to create a wine de-alcoholization center in Switzerland — a project that has already gained considerable support.

My project aims to create the first Swiss wine de-alcoholization center in Perroy. This center will be equipped with an industrial system for cold distillation to preserve the wine’s aromas and qualities and will have the oenological expertise needed to produce partially or fully de-alcoholized wines.

The goal is to provide Swiss producers with the means to meet the growing demand for non-alcoholic beverages. Currently, only foreign de-alcoholized wines are available in Switzerland due to the lack of suitable local technology. You can find more information at www.lavigneronne.ch.

I need your support to acquire the necessary skills and produce good non-alcoholic wines. In collaboration with the Changins School, we will develop these skills.

Together, we will make Swiss non-alcoholic wine possible, a pleasure for all and accessible to everyone, while promoting local and high-quality production.

Research and development in collaboration with the Changins School of Oenology.

This support will be used for research and development, in partnership with the Changins School of Oenology, to produce high-quality non-alcoholic Swiss wines. This will allow us to purchase the necessary equipment for trials and acquire the required skills.

In detail, your support will enable us to:

Choose the best method: We will identify the most effective method for removing alcohol from wine while respecting cost, quality, and efficiency constraints.

Create prototypes: We will produce samples of non-alcoholic wines in a laboratory, which will allow us to test and adjust the method to ensure a quality final product. Conduct analyses: We will carry out chemical and sensory tests to ensure that the taste, aroma, and texture of the wine remain intact after the de-alcoholization process.

Test with consumers: We will organize tastings with consumers to gather their feedback on our non-alcoholic wines.
