first of all thank you for showing interest in our project. We do really intend to work as mentioned in the description. Although, we where thinking a lot about doing it wether vegetarian or vegan, but we came to the conclusion that we will be open for everyone. We would like to give our future guests the freedom of choice. One thing is for sure we will introduce a vegetarian and vegan day once per week. We do also take intensive care, where the products come from we use, it is really our goal to act regional and local. I hope my answer is enough satisfying for you to support us in our challenge. Thank also for the links you provided.

I like the idea of the Krêpmobil. But is it really Sustainable? I would pledge in, if you can do it fully vegan, not using any animal products in the concept (radical suggestion).
I would still pledge in if you have a fully vegan option (but of course with less comittment).
My requests are based on the following suggestions:
1. Sustainable Development Goals - https://en.wikipedia.org/wiki/Sustainable_Development_Goals read Goal #2 of the specific 17.
2. Vegan Crepes - http://www.peta.org/living/food/vegan-crepes/
