…wird endlich Met.

Gestern sind nach langer Zeit endlich die perfekten Etiketten angekommen - und seit heute morgen bin ich am Abfüllen.

Nachdem das Projekt vor drei Jahren ins Leben gerufen wurde könnte sich die ein oder andere Adresse geändert haben. Falls Ihr also in der Zwischenzeit gezügelt sein solltet, bitte ich die neue Anschrift mir zukommen zu lassen, damit der edle Tropfen auch wirklich ans Ziel findet.

Auch wenn ich schon länger Met siede - der Hungg war eine ganz spezielle Herausforderung. Der Honig am Anfang etwas zu schwachbrüstig im Gout, das Holz zu überladen und heftig - die weitere Reifung für ein Jahr im Stahltank tat dem Met mehr als gut. Nun ist er vollmundig, selbst in der Nase hat man nun den Honig, was mir vorher nie so gelang. Im Gaumen geben sich Eiche und Honig nun gleichwertig die Hand und ich bin zufrieden. Manches braucht einfach etwas länger Zeit, doch den Geduldigen belohnt das Warten.

Yesterday, after a long time, the perfect labels had arrived finally - and since this morning I have been bottling.

As the project was started three years ago, one or the other address might have changed. So, if you moved in the meantime, please send me the new address so that the noble drop really finds its way to its destination.

Even though I’ve been seething mead for quite some time - the Hungg was a very special challenge. The honey at the beginning a bit too weak in the gout, the wood too overloaded and violent - the further maturing for one year in the steel tank did the mead more than good. Now it is full-bodied, even in the nose you now have the honey, which I never managed before. On the palate, oak and honey now shake hands equally and I am satisfied. Some things simply take a little longer, but the patient is rewarded by the wait.

…ausserhalb meines normalen Newsletters.

Liebe Unterstützenden, Anscheinend habe ich nicht deutlich kommuniziert, dass meine Updates mit dem «normalen» Newsletter zusammengefasst werden. Dafür meine Entschuldigung - und eine Zusammenfassung, was mittlerweile alles passiert ist.

Stand des Projekts:

Die Etikette ist fertig designed, der Hungg ist mittlerweile aus dem Barrique gezogen worden und wartet im Stahltank auf die Flaschenabfüllung - und da liegt momentan der Wurm begraben: In ganz Europa herrscht seit letztem Herbst eine Weinflaschenknappheit, von der auch ich betroffen bin. Zum einen war die Ernte sensationell, zum anderen steigen immer mehr Getränkehersteller von PET zu Glas um, und zu guter Letzt gingen die einzigen drei Glashütten in Deutschland zeitgleich in Revision.

Dear Supporters, Apparently I did not clearly communicate that my updates are summarized with my «normal» newsletter. For that, my apology - and a summary of what has happened in the meantime.

Status of the project:

The label is ready designed, the Hungg has now been pulled out of the barrique and waits in the steel tank for the bottling - and here to worm is currently buried: Throughout Europe, there has been a shortage of wine bottles since last fall that affects me as well. On the one hand, the wine-harvest was sensational. On the other hand, more and more beverage producers are switching from PET to glass, and last but not least, the only three glassworks in Germany went through a revision at the same time.

Die Zeit, sie rennt…

Liebe Unterstützenden, Entschuldigt zuerst, dass ich Euch erst jetzt wieder über den Stand der Dinge informiere. Die Weihnachtszeit war dieses Jahr sehr geschäftig und von einem Januarloch habe ich nichts mitbekommen.

Da Euch bestimmt interessiert, was der Hung so macht komme ich sofort zum Punkt: Er reift. Mitte Januar habe ich ihn zum ersten Mal aus dem Fass probiert. Momentan hat er sehr starke Holznoten, welche aber im Laufe der Zeit wieder in den Hintergrund rücken werden. (Zumindest haben mir das recht viel Winzer bestätigt) Der etwas zu feine Geschmack konnte sich ausbauen und ich bin erstaunt, was hier im Holz alles passiert. Grob geschätzt (und hier bin ich wirklich Laie, da mit dem Hung der erste Met in einem jungfräulichen Fass reift) rechne ich damit, dass es Mai-Juni wird, bis mir der Geschmack passen wird. Ich freue mich auf den grossen Tag.

Weitere Neuigkeiten? Gerne. :) Seit 2013 gibt es die Metsiederei, dieses Jahr feiere ich also 5 Jahre. Im Laufe dieses Jahres wird es neben dem Hung immer einmal wieder Spezialitäten in Kleinstmengen geben, welche ich letztes Jahr angesetzt habe. Viel Melomels (Honig mit Früchten und Wasser vergoren), Metheglin (Honig mit Kräutern und Wasser vergoren), teils mit Wildhefen, teils mit Zuchthefen.

Time, it runs …

Dear Supporters, First, excuse me for informing you about the state of things just now. The Christmas season was very busy this year and I did not notice a January hole.

Since you are certainly interested about the Hung I get to the point immediately: He is maturing. In the middle of January, I tried it out of the barrel for the first time. Currently he has very strong wood notes, which will move into the background over time. (At least that’s what a lot of winemakers confirmed to me) The slightly too fine taste could expand and I’m amazed what happens here in the barrique. Roughly estimated (and here I am really a layman, since with the Hung the first mead matures in a nonused barrel) I expect that it will be May-June, until the taste will suit me. I am looking forward to the big day.

More news? With pleasure. :) I founded the Metsiederei 2013, so I celebrate 5 years this year. In the course of this year, in addition to the Hung, there will always be specialties in very small quantities on sale.

Some Melomels (honey fermented with fruits and water), some Metheglins (honey fermented with herbs and water), some with wild yeast, some with a cultured yeast.

Während sich die Blätter langsam färben habe ich wieder Neuigkeiten für Euch!

Zum einen ein «Sneak-Peak», extra für euch - denn nicht nur der Hung bekommt eine neu entworfene Etikette, nein, auch mein eigener Honig. Bislang zierten meine Honiggläser die ältere Etikette des VDRB (Verbands deutschschweizer und rätoromanischer Bienenzüchter), jetzt weht eine frische, jugendliche Brise ins Auge. Was ihr hier seht ist der Prototyp - die richtigen Etiketten sind jetzt gerade im Druck, so dass diejenigen, welche sich als Belohnung den Honig ausgesucht haben, bald bei sich daheim im Briefkasten auffinden können.

Dann noch heiss, wie der dampfende Kaffee vor mir auf dem Tisch: Gerade eben wurde das Barrique geliefert. Heute mittag wird kommt es an einen schönen Platz im Keller und wird morgen gefüllt. Ab da heisst es warten und die Zeit wirken lassen. Ich freue mich auf den «Hung». Dank Euch allen wurde das möglich. Merci nochmals!

As autumn arrives, another news!

On the one hand, a «sneak peak», especially for you: Not only the hung gets a redesigned lable, no, my own honey, too. So far, my honey-jars have been decorated with the older etiquette of the VDRB (Association of Swiss-German and Romansh beekeepers), now a fresh, youthful breeze comes into view. What you see here is the prototype - the real labels are now under print, so those who have chosen the honey as a reward can soon find it in the mailbox at home.

Then still hot, like the steaming coffee before me on the table: Just now the barrique was delivered. It will get a nice place in the cellar and will be filled tomorrow. From there it is time to wait and make time work.

I look forward to the «Hung». Thanks to all of you this happened. Merci again!

Ein Hallo nach der Ferienzeit.

Vieles hat sich seit den letzten News getan:

Der Hung gärt weiterhin wunderbar und hat mittlerweile einen Alkoholgehalt von 11,3%. Nun ist ein geschicktes Händchen, bzw. eine sensible Zunge gefragt, um den richtigen Moment abzupassen die Gärung zu stoppen. Natürlich darf man nicht vergessen, dass der Met später noch in ein Eichenfass kommt, welches die Charakteristik nocheinmal prägen wird.

Apropos Eichenfass: Dieses ist momentan im Bau und wird in ca. drei Wochen geliefert werden.

Auch konnte ich nun den Honig ernten und schleudern - noch muss er abgefüllt und die Gläser etikettiert werden, bevor er dann seinen Weg zu Euch finden wird.

Etiketten… ja, auch hier gibt es bereits erste Entwürfe. Tim Engel von /2 (durchzwei.ch) schafft es immer wieder mich mit seinen Designideen zu überraschen. Ich bin gespannt, wie die Etikette des Hung am Schluss dann aussehen wird. Ganz abgesehen vom Inhalt natürlich. ;)

Ansonsten gibt es natürlich wieder die Gelegenheit mich an einem Markt oder Messe anzutreffen: Vom 18. - 20. August bin ich auf der Authentica Basel (www.authencia.ch) Am 2. September habe ich einen Stand am Mechilche Märit (Meikirch Markt), ganz in der Nähe von Bern.

Kommt vorbei, mich würde es freuen.

A hello after the holiday season.

Much has happened since the last news:

The Hung continues to get wonderful and has an alcohol content of 11.3% at the moment. Now, a skilled hand, or better, a sensitive tongue is required to stop the fermentation at the right moment. Of course one must not forget that the mead will get into an oak barrel, which will characterize the characteristic again.

Speaking of oak barrel: It is currently under construction and will be delivered in about three weeks.

I could also harvest the honey and «hurl» it - yet it must be filled and the glasses labeled before he will find his way to you.

Labels … yes, here too, there are already first drafts. Tim Engel from / 2 (durchzwei.ch) always manages to surprise me with his design ideas. I’m curious to see how the label of the Hung will look at the end. Quite apart from the content, of course. ;)

Otherwise there is of course the opportunity to meet me at a fair: From 18 - 20 August I am at the Authentica Basel (www.authencia.ch) On 2 September I have a stand at Mechilche Märit (Meikirchmarkt), very close to Bern.

Der «Hung» ist angesetzt!

Liebe Unterstützende,
Nachdem ich Anfangs Woche ein Telefonat von der Imkerei Soland bekommen habe, konnte ich gestern die 100kg Blütenhonig für den Hung abholen.

Die Imkerei befindet sich idyllisch gelegen am Twannberg, oberhalb des Bielersees.

Von mir aus ist es ein Katzensprung, doch immerwieder überrascht mich das fast mediterane Klima.
Solands hatten Glück mit dem Honig – wo andere dieses Jahr dank des sehr frostigen Frühlings nur wenig Honig ernten konnten, gab es doch ein paar Tonnen.
100kg davon wurden also geschwind eingeladen und zu mir in die Metsiederei gebracht, wo sie heute auch schon verarbeitet wurden.

Der Honig besteht, wie man sieht, zum grössten Teil aus Rapshonig. Sehr feine grassige Noten und eine dezente Süsse lassen mich auf den Met neugierig werden.
Ich denke, ihr seid es auch, gell? :)

Sonst läuft weiterhin alles wie geplant.
Erste Absprachen von wegen der Etikette wurden mit Tim Engel von durchzwei getätigt und ich habe grosses Vertrauen in sein künstlerisches Händchen. Zusammen haben wir schon die Etiketten meiner anderen Sorten designed.

So weit, so gut. Möge nun die Hefe ihre Magie wirken.

Dear backers,

After I got a phone call from the Apiary Soland at the beginning
of the week, I was able to pick up the 100kg multiflower honey for the Hung yesterday.

The Apiary is located at the Twannberg, above Lake Biel.

From me it is a half-an-hour drive, but again and again I am surprised by the almost Mediterranean climate.

Solands were lucky with the honey – where others were able to harvest very little this year, thanks to the very frosty spring – Solands were able to gather some tons.
100kg of that honey were quickly loaded and brought to me. Today I mixed the water and honey.

The honey, as can be seen, consists mostly of colza honey.
Very fine grassy notes and a subtle sweetness make me curious about the Met.

I think you are too, right? :)

Well, everything is going on as planned.

First talks about the lable were made with Tim Engel from durchzwei, and I have great confidence in his artistic skills.
Together we designed the labels of my other meads.

So far, so good – let’s hope the yeast will work it’s magick.

Liebe Unterstützende!

Ein kurzes Lebenszeichen und Update meinerseits, nicht das ihr euch über euer investiertes Geld sorgt:

Fast alle der schon jetzt vorhandenen Belohnungen, sprich meine momentanen Metsorten wurden versandt.

Die Abnahme der Geschenkboxen läuft so «lala». ;)
Bislang konnte ich erst eine der Boxen abgeben und einen anderen Termin vereinbaren – fehlen also noch drei Termine.
Die drei, welche es betrifft sollten diesen Vormittag eine weitere Mail von mir erhalten haben, wenn nicht, bitte meldet euch!

Wie bereits geschrieben wurde der Honig bei der Imkerei Soland für den Hung bereits reserviert – ich hoffe, es gibt genug, denn…

…und hier kommen wir zur schlechten Nachricht:
Für uns Imker, wie auch Obstbauern und Winzer war der Frühling nicht wirklich ein guter Start ins Jahr.
In der Zeit, in der die Obstbäume voll in der Blüte standen, hatten wir Frost und dermassen schlechtes Flugwetter, dass ich in den Bäumen wenn, dann nur Hummeln sah.
Hinzu kommt, dass ich selbst noch nie so kleine Völker im Mai hatte – aber mehr als verständlich bei den Temperaturen.

Ich muss also euch 17, die meinen eigenen Honig in der Belohnung stehen hatten, vertrösten.
Frühjahrshonig wird es bei mir dieses Jahr keinen geben. Ich hoffe auf die Waldtracht im Spätsommer.
Euren Honig bekommt ihr, das ist sicher – nur eben etwas später als geplant.

Und, um die News mit etwas Gutem zu beenden:
Bald wird es Neuigkeiten (und zwar gute) von und über das Fass geben.

Dear Backers!

A short lifesign and update – I don’t want you leave you full of sorrow about your money invested:
Almost all of the already existing rewards, ie my current meads were sent.

The picup of the gift-boxes runs so «lala». ;)
So far, I was only able to give one of the boxes and make another appointment – so there are still three dates left.
The three who are concerned should have received another mail from me this morning, if not, please report!

As already written, the honey has already been reserved for the «Hung» at the apiary Soland – I hope there is enough because …

… and here we come to the bad news:

For us beekeepers, as well as fruit growers and winemakers, the spring was not really a good start into the year.
In the time as fruit trees were in full-bloom, we had frost and
so bad weather that during the warmer days only bumblebees could be spotted in the trees.
On top of that, I have never had such small colonies in May - more than understandable due this temperatures.
I therefore have to write to those 17 of you, who had my own honey as reward: I’m not able to harvest spring-honey this year as there is none. I hope for the forest-honey in late summer.

You’ll get your honey, that’s for sure - just a little later than planned.

And to close this letter with something good:

Euch allen ein frohes Osterfest im Kreise eurer Lieben.

Der Frühling zieht nun endlich wieder ins Land, die Blüten spriesen – und damit es nicht zu romantisch wird: Für meine Bienen ist es, nach einer sonnigen Phase vor zwei Wochen, trotzdem momentan etwas zu kalt und zu windig. In den Obstbäumen bei mir sehe ich hauptsächlich Hummeln. Ich hoffe nur auf wärmere und vor allem windstille Tage.

Noch eine gute Nachricht:
Nächste Woche werden die ersten Kartons der schon vorhandenen Metsorten auf den Weg gebracht.
Ihr habt mir euer Vertrauen ausgesprochen und nun möchte ich mich so schnell wie möglich dafür revanchieren.

Spring is finally coming back into the country, the flowers bloom – not to become too romantic: for my bees it is, after a sunny phase two weeks ago, nevertheless too cold and too windy at the moment.
In the fruit trees I see mainly bumblebees.
I do hope for warmer and especially windless days.

Another good news:

Next week the first boxes of already existing mead will be dispatched.
You have expressed your trust in me and now I want to retaliate as soon as possible.

Lieber Unterstützer, liebe Unterstützerinnen,

Irgendwie scheint es mir surreal, doch heute morgen nach dem Aufstehen ist das Crowdfunding immer noch erfolgreich beendet, es muss also stimmen.

Nochmals einen riesengrosses Danke von meiner Seite aus.

Wie geht es nun weiter?

  • Stück für Stück werde ich in nächster Zeit die Belohnungen, welche ich jetzt schon im Keller habe bereit machen und an euch verschicken, bzw. im Fall der Geschenkbox dann euch auch kontaktieren wann ihr diese gerne abholen wolltet.
  • Der Honig für den «Hung» wurde gerade heute vormittag bestellt, die Bestellung des Holzfass braucht noch einen kleinen Moment.
    Hier steht einfach die Frage des Holzes noch offen, bzw. es gibt noch kleine Detailfragen zu klären.
  • Das Design der «Hung» Etikette steht auch noch an, auch die Auswahl der Etikette an sich. Eine ziemlich intensive Angelegenheit.

Selbstredend werde ich Euch weiterhin auf dem Laufenden halten.
Wenn ihr sonst auch noch Fragen habt, meldet euch!

Somehow, it seems to be surreal, but after waking up the crowdfunding is still successfully finished, so it must be true.

How does it go on?

  • Reward by reward I will pack them and send to you, concerning those which I already have in my the cellar.
    In the case of the gift box I’ll also contact you when you want to collect them.
  • The honey for the «Hung» was ordered just this morning, the order of the wooden barrel still needs a small amont of time.
    Here the question of the wood is still open and there are still small detailed questions to clarify.
  • The design of «Hung» etiquette is still to be made, as is the selection of etiquette itself. A rather intense matter.

Jetzt, wo der Kleine seinen Mittagsschlaf hält, kann ich doch noch ganz kurz nach dem Ablauf der Crowdfunding-Zeit ein paar Worte schreiben.

Wobei: Mir fehlen die Worte!

Heute morgen vor dem Frühstück habe ich noch kalkuliert, ob ich nicht irgendwie den restlichen Betrag zuschiessen soll, doch ging die Rechnung immer ins Minus. Ich fand mich damit ab, dass das Crowdfunding kurz vor dem Ziel in Stocken geriet.

Dann nach dem Frühstück die Überraschung:
100% finanziert und da ging das Crowdfunding noch 2,5h!

Liebe Backende,

Eigentlich hätte ich die News schreiben wollen, als das Crowdfunding noch 24h gegangen wäre – doch da gab es leider technische Probleme bei wemakeit selbst.

Nun, noch 14 Stunden, denn morgen um 12:00Uhr endet das Crowdfunding.

Ich will nicht pessimistisch sein, aber momentan fehlen noch genau 1793Fr.
Auch will ich nicht vor dem kompletten Ende die Hoffnung sinken lassen, aber wie es aussieht sind das etwas zu viel Franken für die verbleibende Anzahl Stunden.

Nachdem ich morgen vorraussichtlich nicht zum Newsschreiben kommen werde (Donnerstag ist Papitag. :) ) und ich nicht weiss, ob ich nach Ablauf der Zeit hier noch schreiben kann, schon einmal jetzt ein ganz herzliches Dankeschön für euer Vertrauen!

Es ehrt mich, das ihr 53, manche bekannt, manche fremd, manche im Laufe des Crowdfundings bekannt geworden, mich in meinem Traum unterstützen wolltet.

Auch wenn das Crowdfunding scheitern sollte – ich halte an einem 100% Schweizer Met fest.

Ich werde in Erfahrung bringen, wie ich noch mehr Leute ins Boot bringen kann und würde es wohl nochmals versuchen.

Actually, I would have wanted to write this news when the crowdfunding had still 24 hours left – but there were unfortunately technical problems at wemakeit itself.

Well, still we have 14 hours, tomorrow at 12: 00 clock the crowdfunding ends.

I do not want to be pessimistic, but currently we’re missing 1793Fr.

As it looks they’re a little too much francs for the remaining number of hours.

After tomorrow I will probably not come to the newsletter (Thursday is Dadyday. :)) and I do not know if I can write here after the crowdfunding time is gone, already a very heartfelt thanks for your trust!

It honors me that you all wanted to support me in my dream.

Even if the crowdfunding should fail – I hold on a 100% Swiss Mead.

I will find out how I can get more people on the boat and I’ll try again.

Nun, nun – es bleibt spannend…
Im Moment fehlen ganz genau noch 3008Fr. und ich hoffe nicht, dass uns auf den letzten paar Metern noch die Puste ausgeht.
(Auch wenn es eine Menge Geld ist…)

Es heisst nun noch einmal alles zu geben.
(Nein, natürlich will ich euch nicht über die Gebühr beanspruchen, ich finde euren Einsatz bemerkenswert und bin mega froh über euren Zuspruch zu meinem Projekt.)

Vielleicht fällt euch ja noch etwas ein, wie man auf die schnelle Unterstützer gewinnen könnte?

Wow, da ist man mit der Süss fertig, hat seine Sachen wieder verstaut, schaut hier nach und freut sich. Knapp über 5000Fr., mit denen ihr mich bis jetzt unterstützt. Genial!

Innerhalb von drei Tagen 3500 Fr. zu sammeln sollte möglich sein.

Ein kleines Vögelchen hat mir etwas zu den oberen Belohnungen ins Ohr geflüstert. Ich passe sie also etwas an und vielleicht sind sie so noch etwas lockender.

Die 500CHF Belohnung beinhaltet nun nicht nur den Besuch meiner Bienen, nein es gibt hier noch einen 6er Karton mit je einer 50cl Flasche all meiner Sorten. Also: Milfion, Black Label Milfion, NorseMet, Black Label NorseMet, Fleur de Miel – und natürlich den «Hung».

Bei der 750CHF Belohnung, also der Besichtung der Metsiederei mit der Degustation, gibt es auch noch den 6er Karton mit all meinen Sorten dazu.

Einen wunderschönen guten Abend liebe Unterstützende,

Ein Willkommen an all die «Neuen» – Merci seid ihr auch an Bord!

Der erste Tag der Süss-Messe in Köniz bei Bern ist vorbei und auch hier haben Interessierte die Gelegenheit genutzt und meine Sorten degustiert.

Es ist immer wieder faszinierend, wie aus der Virtualität des Internet auch einmal Realität wird.

Mich freut auf jeden Fall, wenn jemanden, der vorher noch nie mit Met Kontakt hatte, nach dem ersten vorsichtigen Schluck die Mundwinkel nach oben zucken und ein «Wow, huaraguad» hinterher kommt. Eine wundervolle Motivation.

Ein kurzes Thema heute: Wie die Menschheit überhaupt Met entdeckte.

Werte Leserin, werter Leser,
lassen Sie sich von mir in das Mesolithikum des Mitteleuropa entführen. Der Ort ist rein fiktiv, es könnte sich auch um Nordchina oder Afrika handeln, Hauptsache es hat dort Honigbienen.

Wir befinden uns ungefähr um 9000v. Christus, die letzte Eiszeit ist vergangen, die Wälder fangen seit mehreren hundert Jahren wieder an zu wachsen.

Es ist Frühsommer, seit Tagen haben wir uns durch das Kauen von Wurzeln ernährt. In wärmende Felle gehüllt streifen wir durch den Urwald, nicht weit entfernt von unserer momentanen Lager, einer Hütte aus verflochtenen Rindenstreifen und gespaltenen Baumstämmen.

Durch das Unterholz stapfend sind wir froh, als sich der Wald zu einer Lichtung auftut und ein Sonnenstrahl durch die dichten Blätter fällt.
Wie es der Zufall will trifft sich das Licht in einem mannshohen Baumstumpf. Unsere Nase wittert einen süsslichen und leicht scharfen Geruch aus diesem.
Neugierig gehen wir auf den Baumstumpf zu.
An der Seite ist er aufgerissen und wir können Bienenwaben erkennen. Wir wissen um die kleinen, schwarzen Insekten, die uns, wenn wir uns zu nahe wagen, empfindlich stechen können.
Doch es scheint, als wäre das Nest verlassen.

Dem Frieden nicht ganz trauend, tasten wir uns vorsichtig voran.
Immer noch keine Bienen zu hören und zu sehen.
Der Hunger überkommt uns und wir brechen ein Stück der Waben heraus. Honig läuft uns flüssig über die Finger.
Mit einem wohligen Grunzen beissen wir herzhaft in die Waben.
Das alte, kalte Wachs bricht unter unseren Zähnen und der Honig benetzt unsere Zunge.

Aber es ist eine andere Art Honig. Er ist viel flüssiger, zwar noch süss, aber irgendwie scharf und säuerlich. Hungrig wie wir sind, verzehren wir die Wabe trotzdem und geniessen jeden Biss und Schluck.

Doch irgendwie wird uns nach einiger Zeit lustig zumute. Wir fangen an die normalsten Dinge lustig zu finden und prusten lachend durch den Wald. Unsere Füsse scheinen uns nicht mehr richtig folgen zu wollen, wir taumeln an den Bäumen entlang. Wir haben keine Angst und machen uns singend wieder auf dem Weg nach Hause.

Eine dieser speziellen Waben haben wir für unsere Schamanin eingepackt. Ganz sicher wird sie uns erklären können, was es damit auf sich hat.

Ich freue mich auf die letzten vier Tage!

First a welcome to all the new ones – «Merci» that you are on board, too!

The first day of the «Süss» fair in Köniz near Bern is over and here interested people took the opportunity and tasted my meads.

It is always fascinating how the virtual reality becomes a reality.
What is great about personal contact: One can see the reaction to a first slip of mead. It’s such a empowering moment if the taster begins to smile afterwards and really likes your product.

Well, the brief subject today: How mankind discovered mead.

Dear reader,let me take you to the Mesolithic of Central Europe. The place is purely fictional; it could also be about North China or Africa, the main thing is that there have to be honey bees.

We are about 9000BC, the last ice age has passed, the forests have been growing again for several hundred years now.

It is early summer, for days we have fed ourselves by the chewing of roots. Wrapped in warm skins, we wander through the jungle, not far from our current camp, a hut of intertwined bark strips and split logs.

Stomping through the undergrowth, we are glad as the forest opens to a clearing and a sunbeam falls through the dense leaves.

As luck would have it, the light met in a man-high tree stump. Our nose smells a sweet and slightly sharp smell of it

Curiously we go to the tree stump.

At the side he is torn open and we can see honeycombs. We know about the small, black insects, which, if we venture too close to each other, can bite us very sensitive.

But it seems as if the nest is left.

Not quite trusting to peace, we take a cautious approach.

Still no bees to hear and see.

The hunger overcomes us and we break out a piece of the honeycombs. Honey runs smoothly over our fingers.

With a pleasant grunt we bite heartily into the honeycombs.

The old, cold wax breaks under our teeth and the honey wets our tongue.

But this is another kind of honey. It is much more fluid, but still sweet, but somehow sharp and sour. Hungry as we are, we consume the honeycomb anyway and enjoy every bite and sip.

But somehow we feel funny after some time. We start to find the most normal things funny and chuckle with laughter through the forest. Our feet do not seem to follow us properly, we stagger along the trees. We are not afraid and went home singing.

One of these special honeycombs we have packed for our shaman. Surely she will be able to explain to us what it is.

I look forward to the last four days!

Die letzte Woche des Crowdfundings ist eingeläutet – nun also wirklich Endspurt. Wird es mir möglich sein in 6 Tagen 5000Fr. zu sammeln? Ich fühle mich wie Phileas Fogg beim Start seiner Weltreise.

Die nächsten zwei Tage werde ich mich in Köniz auf der «Süss» (www.suessbern.ch) befinden – paradoxerweise, um dem interessierten Publikum zu zeigen, dass Met nicht nur süss ist.

Wie Traubensaft auch hat Honig allein schon unterschiedliche Süssegrade, welche man entweder in Grad Oechsle oder % Brix messen kann.
So ist, z.b. Waldhonig um einiges weniger süss als wie Akazienhonig.

Nachdem man beim Met Honig mit Wasser vermischt entscheidet danach auch das Mischungsverhältnis wie süss das Endprodukt werden soll – und natürlich auch noch die Gärdauer.

Je mehr Alkohol, desto weniger Zucker, desto weniger süss ist die Devise. (Wobei man natürlich nach der Gärung wiederum nachsüssen könnte – ich selbst mache dies allerdings nicht)

Sehen wir uns an der Süss? Würde mich freuen!

The famous last week is on the run. Will I be able to gather 5000CHF in 6 days? I feel like Phileas Fogg at the start of his 80days journey.

The next two days I’m at the «Süss» Tradefair. (www.suessbern.ch) It’s funny that I’m there to show people that mead hasn’t always be sweet.

Like grapejuice honey itself is not always the same sweet.
You can meassure them in Grad Oechlse or % Brix.
For example: Pine honey is way less sweet than acacia honey.

During the production of mead you have to mix water with honey. Of course the mixture ratio decides how sweet the mead will be – and another point is the fermentation time.

The longer the mead ferments the more alcohol it will develop, the less sugar it will contain, the less sweet will be the mead. (Sure, after fermentation you could add some honey again to boosten up the sweetness. I don’t do this ;) )

Einen schönen Tag miteinander,

Die heutigen «News» fallen etwas kürzer aus als die gestrige Ausführung über die dunkle Biene, keine Sorge.
Es gäbe eben soviel zu erzählen – aber wir alle haben nur begrenzt Zeit… weshalb ich die eurige nicht unnötig strapazieren möchte.

Deshalb kurz und knapp:
Warum heisst Met Met?

Der Name Met hat sich aus dem proto-indogermanischem médʰu entwickelt.
Aus dem Indogermanischen haben sich unsere Sprachen entwickelt. Es war die uralte Sprache, welche wir Menschen in der Jungsteinzeit entwickelten.

Médʰu steht/stand für Honig oder für einen süssen, berauschenden Trank – und ja, Met ist wirklich so alt, dass es selbst in der Jungsteinzeit ein Wort dafür gab.

Im Germanischen wandelte sich médʰu zum meduz, wurde im Althochdeutschen zum metu und schlussendlich im heutigem Hochdeutsch zum Met.

Why mead is named mead?

The name mead developed from the proto-indo-germanic word médʰu.
Proto-indo-germanic was the language spoken by humans living in the neolithicum. From it all european languages (and some more) developed.

Médʰu means honey or a sweet intoxicating drink.
Indeed mead is really that old, that there was a neolithican name for it.

In germanic médʰu chanced towards meduz, was formed into old Ænglisc medu and finally went to mead nowadays.

Gestern im Roots habe ich tatsächlich eine Stimme für das Lärchenfass notieren dürfen.
Kommunikation über die News funktioniert also. :) Cool!

Wie versprochen gibt es auch heute Zeilen von mir über das Projekt zu lesen.

Nachdem endlich Frühling ist, dachte ich mir, ich schreibe etwas über die kleinen Tierchen, ohne die es keinen Honig und damit auch keinen Met gäbe.

Die Apis Mellifera; unsere westliche Honigbiene.
Und hier ganz genau die Apis Mellifera Mellifera, die dunkle Biene.

Diese Unterart bildete sich im Laufe der letzten Eiszeit und besiedelte den Raum nördlich der Alpen.
Im Laufe der Zeit hat sie sich perfekt an die klimatischen Bedingungen angepasst.
Sie unterscheidet sich morphologisch deutlich von den beiden anderen natürlichen Rassen, der A.m.carnica und der A.m.ligustica.
Sie hat den längsten und breitesten Körper, die Schweizer und Österreicher Unterart nigra hat eine schwarze Haarfarbe und pigmentierte Flügel – was dann auch den Ausschlag zum Namen gab.

Um 1850 erreichte die Population der Dunklen Biene die grösste Ausbreitung, da sie durch Auswanderer in sämtliche gemässigten Klimazonen der neuen Welt mitgenommen wurde.

Seit 150 Jahren wird die Dunkle Biene durch Carnica und Ligustica verdrängt.
Der Grund? Die Volksstärke der Nigra wächst im Frühjahr etwas langsamer und damit erreicht man einen geringeren Honigertrag.
Allerdings verbraucht sie auch weniger Futter und ist genügsamer, eben perfekt auf unser Klima angepasst.

Ihre Populationen sind mittlerweile so zerstückelt und reduziert, dass ihr Bestand als gefährdet gilt.

Innerhalb der Schweiz kann man reinrassige Nigra nur im Kanton Glarus und im Schutzgebiet Melchtal halten.
An anderen Orten vermischen sich die Völker mit anderen Rassen.

Was ist nun das spezielle an der Apis Mellifera Mellifera nigra?

Abgesehen davon, dass sie «unsere» ursprüngliche Honigbiene ist:

  • Sie dosiert ihre Bruttätigkeit entsprechend des Klimas
  • Das Brutnest ist umgeben von einem starken Pollenkranz (selbst unter der Brut) und einem schweren Honigkranz
  • Sie trägt bei normalen Trachtbedingungen (Tracht = Blüte) weniger ein, dafür aber bei kritischen ein mehrfaches.
  • Sie sammelt mehr Pollen und Propolis, was den Honig aromatischer macht
  • Die dosierte Bruttätigkeit resultiert je nach lokalen Gegebenheiten in einer reduzierten Schwarmtätigkeit
  • In der Wintertraube sitzen die Bienen extrem dicht aufeinander und in der Regel wird auch eine ausgediente Brutpause eingehalten

Kurzum, um es mit den Worten von Friedrich Ruttner zu schreiben: «Die Dunkle Biene zeigt eine extreme Vorsicht als Überlebensstrategie in einer harten Umwelt.»

As promised some words on the project.
Today, as we finally have some spring here, something about the little animals who make the honey – and therefor are the reason there’s mead:
The Apis mellifera; our western honeybee.
More precise, the Apis Mellifera Mellifera, the dark bee.

This subspecies developed during the last iceage and settled north of the alps.
During times she perfectly adopted to the climate here.
She differs a lot from the other two natural subspecies, A.m.carnica and A.m.ligurica.
A.m.mellifera has the longest and widest body, the swiss and austrian subspecies nigra has black hair and pigmented wing which gave them the name.

Around 1850 the population of the dark bee reached its peek. Emmigrants take her to all moderate climate zones.

Since 150 years the dark bee is displaced with carnica and ligurica.
The reason? Colonies of the nigra grow slower and you get less honey.

The populations nowadays are so fragmented and reduced that the A.m.mellifera counts as endangered species.

Inside of Switzerland you can have purebreed nigras only in the canton of Glarus and in the reservation Melchtal.
In all other places the colonies will mix.

What is so special about the Apis mellifera mellifera nigra?

Well, beside of she’s our heritage:

  • She regulates her breeding according to the climate
  • The brood is surrounded with a large ring of pollen (even beneath the breed) and a heavy ring of honey
  • During normal circumstances she brings less honey, but during bad times mauch more.
  • The regulated brood results in reduced swarming
  • In wintertimes the bees sitting extreme tight together and a longer broodbreak usually takes place –> reduced need of energy.

In short, with the words of Friedrich Ruttner:
«The dark bee shows extreme caution as survivalinstinct within a hard surrounding»

Es ist faszinierend, wie schnell die Zeit ins Land zieht – da waren es noch 10 Tage und knapp die Hälfte der angestrebten 8500Fr. konnte ich bis jetzt durch Euch alle finanzieren.

Ein grosses Merci!

Ich bereite mich schonmal auf den Endspurt vor. Noch ist alles offen, ich bin aber zuversichtlich dank Euch den «Hung» sieden zu dürfen.

Die letzten 10 Tage dachte ich, dass ich jeden Tag eine News lanciere. Um Euch damit nicht nur zu langweilen würde ich Euch gerne einbeziehen.

Wie zum Beispiel: Die Holzart des Fasses.

Ich pendle noch zwischen Akazie, Eiche und Lärche, bzw. Arve hin und her. Was habt ihr denn gern?

Akazie unterstützt schön den Honigcharakter und baut diesen sanft schmeichelnd aus, mit der Eiche bekommt man die typischen Vanillienoten, aber auch leichte Gerbstoffe, die allerdings nicht dominant wirken. Lärche hingegen färbt sehr harzig ab, was den Met einem Mastix/Olibanum-Ton gibt. Nicht ganz so extrem wie ein Retsina.

I’m preparing myself for the final spurt. Still everything is possible and I’m still confident to make the «Hung» with your help.

For the last ten I have in mind to post a news each day.

I would like to involve you all and not to bore you with it. :)

For example: The kind of wood for the barrel

Acacia, Oak or Larch/Swiss stone pine

I’m pulled from one to the other side. What would you prefer?

Acacia supports the honeyflavour quite nicely and rises it to a full mouth. Oak gives you the typical Vanilliehints, but some light taninflavours, too. They don’t act to dominant, for luck.

With Larch you do have some resin-flavours within the mead. Just think about Mastix/Olibanum, but not as extreme as a Retsina.
Swiss stone pine would be the perfect fitting if one thinks about Swiss special woods, but it is close to Larch.

Just write me in the comments what kind of wood you would prefer.

First of all a big excuse for forgetting the english text of my last news. It will be refitted!

Vorerst weiter auf Deutsch:

Hey, 30 Unterstützende meines Projekts! Cool. Und das obwohl ich nicht wirklich dazu komme Kommunikation zu betreiben. Manchmal müsste man sich einfach aufteilen können.
So bin ich momentan am Abfüllen von 600l Black Label Milfion, habe gestern von drei kleinen Fässer die Hefe sterben lassen und sie zusammen für einen weiteren Black Label NorseMet in mein zweites grosses Fass zusammengefügt – zudem hatte ich mit meinen Bienen ein etwas unerfreuliches Auswintern: Nur zwei meiner zwölf Völker haben überlebt. Nicht wirklich erbaulich und man macht sich natürlich einen Kopf darüber, was man hätte besser machen können.
Bei vier der Völker hätte ich etwas machen können, sie hatten zu wenig Futter, bzw. waren zu klein um das Futter zu erreichen.
Die anderen sechs Völker sind einfach weg. Futter wäre noch genügend da gewesen, die Völker selbst beim Einwintern noch gross. Und ja, natürlich habe ich gegen Varroamilben behandelt…
…als Imker muss man heutzutage ein dickes Fell haben.

Item, ich blicke weiter in die Zukunft, wie zum Beispiel:
Dank der Silbermedaille des MazerCups gibt es seit heute eine neue Belohnung:

Für 45Fr. erhält man als Dank eine 50cl Flasche Black Label NorseMet.
Eben, den mit der Silbermedaille. ;)

Wow, 30 supporters of my crowdfunding! Great. And even without a real communication behind it. The tradigy of a single-man-company. Sometime one should clone himself…

At the moment I’m filling bottles from a 600l tank of Black Lable Milfion and killed the yeast within the mead in three other small tanks to mix them together. This will be another Black Label NorseMet in a year.
Beside of the in-house work I get to know some cruelties of nature: Only two out of my twelfe colonies survied this winter.
It’s harsh and I thought about my failtures, of course.
Four colonies had died because they were either to small to reach their food – or because they had none left.
The other six casualties just left. No signs of the «why» – they had plenty enough food and were big as I get them into the winter.
No easy task to keep bees these times…

Nevertheless, the future’s ahead:

Hallo zusammen,

Schön zu sehen, dass sich mittlerweile 25 Unterstützende hier zusammengefunden haben, um den Hung zum Sieden zu bekommen.

Danke jeder und jedem von Euch!

Auch hat meine Idee selbst bei wemakeit Anklang gefunden und wurde zum «Liebling» auserkoren – man sieht es also gleich auf der Titelseite, was wohl noch mehr Aufmerksamkeit und Unterstützende anzieht.

Apropos Aufmerksamkeit:
Als Ein-Mann-Betrieb mit tagtäglichen Aufgaben, welche nicht so ohne weiteres aufgeschoben werden können, bin ich auch darauf angewiesen, dass sich mein «Wunschkind Hung» auch ohne mein Zutun herumspricht.
Darf ich euch bitten eurem Umfeld vom «Hung» zu erzählen?
Das wäre super!

Dieses Wochenende fand vom 10.3. – 12.3. neben der SlowFood Messe in Bern in den USA der Mazer Cup statt.

Der Mazer Cup ist der grösste internationale Wettbewerb, bei dem Metsorten von einer Jury bewertet und prämiert werden.
400 kommerzielle Anbieter haben dieses Jahr ihre Metsorten eingereicht, darunter auch ich.

Vor wenigen Stunden habe ich erfahren, dass mein Black Label NorseMet in der Kategorie «Traditional –Semi Sweet» mit der Silbermedallie ausgezeichnet wurde.

So ganz kann ich es immer noch nicht fassen, dass einer der weltbesten Met aus der Schweiz stammt – und von mir.

Ich werde mir mit dem «Hung» die grösste Mühe geben auch hier etwas podestwürdiges zu kreiieren, versprochen!

This weekend next to the SlowFood Market in Berne, the Mazer Cup in the USA took place, too.
The Mazer Cup is one of the biggest international competitions for mead.
400 commercial meaderies sent in their meads this year, I was one of them.

For a few hours I got to know that my Black Label NorseMet was awarded Silver in the Category «Traditional –Semi Sweet».

I still can’t believe that one of the worlds best meads is produced in Switzerland – and from me.

With the «Hung» I promise to create something of the same level!

A very, very big thanks to all of you!

The first 1000Fr. are reached, thanks to you and I have still 30days left. I do look forward to reach the big goal.

There will be a little recording this week (well, sorry, it will be in German… and I have problems integrating subtitles. :/ ), afterwards I’ll head on to the SlowFood Market in Berne.

For sure you’re allowed to visit me there. I’ll be behind the stand of «frisches.ch» and ready for a mead-tasting.

Ein ganz, ganz grosses Merci an Euch!

Die ersten 1000Fr. wären dank euch finanziert – und das Crowdfunding dauert noch 30 Tage, was mich zuversichtlich stimmt.

Mitte dieser Woche wird es noch einen klitzekleinen Film geben und dann geht es für mich schnurstracks auf den Berner SlowFood Market.

Gerne dürft ihr mich da am Stand von frisches.ch treffen, drei meiner Metsorten degustieren, mit mir diskutieren, unklares klären und einfach einmal einen Metsieder in live sehen.

…und irgendwie mache ich den Vorurteilen als Berner alle Ehre:
Es geht alles etwas langsamer.

Dafür aber mit umso mehr «stuure gring»:

In der Zwischenzeit konnte ich verschiedene Hölzer degustieren.
Es ist erstaunlich, wie sich die Holznoten unterschiedlich mit dem Met vertragen und erstaunliches zu Tage bringen.

Lärche, zum Beispiel, färbt mit ihrem typischen Harz auf dem Met so ab, dass man meinen könnte Weihrauch zu schmecken.
Kirsche ist leider etwas zu zellophanlastig im Mund – man könnte also auch Pappe oder Sägespäne lutschen.

Den Geheimtipp habe ich aber noch unter Verschluss und pröbele hier noch einwenig herum.

Schliesslich soll der Hung mein Bester werden.
